The basic Scandinavian diet is both simple and hearty, consisting of foods from the sea and land, prepared and served to make eating much more than just a meal. A breakfast usually includes a porridge made with oatmeal and incorporating fruit, then breads with eggs, cheeses or even herring, the staple of most Scandinavian larders. Lunch is probably the most popular meal, tempting selections of cured and fresh fish and other seafood such as prawns, with cold cuts of meat, served on a platter with plenty of healthy rye bread for you to construct your own open sandwiches. Known as a Smørrebrød (originally smør og brød; Danish for "butter and bread"), this is healthy, tasty, and visually appealing, something to enjoy any time of the day.
